HONEY BAKED CHICKEN WITH A MEDITERRANEAN SALAD

Here's my delicious chicken recipe which is easy to make and healthy for you and just perfect for those lazy days when you don't feel like spending too much time cooking in the kitchen. Enjoy!
4 chicken pieces. Sauce: 1 tablespoon honey; 1 teaspoon wholegrain seeded mustard; 1 teaspoon red wine vinegar; dash of red wine; 1/2 red chilli deseeded and finely chopped (optional); 1 lemon wedge. Salad: 2 lettuce leaves chopped; 1 tomato; handful of kalamata olives, 1/2 avocado, 1/4 red onion chopped finely or sliced, 1/2 cucumber.
Add the chicken pieces to a baking pan, add the sauce. Cover with alfoil and bake for approximately 50 minutes at 180 degrees celcius. (Check after 30 minutes and turn the chicken or baste sauce with a spoon to ensure even mixture).
Prep the salad a few minutes before the chicken is ready and serve.
