LEMON GARLIC SHRIMP WITH ZUCCHINI NOODLES

Ingredients
1 1/2 tsps olive oil; pinch crushed red pepper flakes; 4 oz peeled and deveined shrimp; 2 cloves garlic crushed; 1 medium zucchini spiralized; pinch sea salt and fresh black pepper; 1/4 cup halved grape tomatoes; 1/4 lemon.
Directions

Heat a medium non-stick pan over medium-high heat. Add 1 tspn of oil and crushed red pepper flakes, add shrimp and season with pinch salt and pepper; cook 2-3 mins. Add half the garlic and continue cooking for 1 min or until the shrimp is cooked through and opaque. Set aside on a dish.

Add remaining 1/2 tspn oil and garlic to pan, cook 30 secs, then add the zucchini noodles and cook 1 1/2 mins. Add shrimp and tomatoes to pan and squeeze the lemon over the dish.

Remove from heat and serve.
