Healthy Lunch Idea Using a Rainbow of Colours Healthy Recipe

When you use a Rainbow as a nutritional guide you are ensuring that you are benefiting from a wide spectrum of vitamins, minerals and nutrients that are provided by each colour group. Eating all five colour groups every day is an excellent way to keep healthy and feeling your best.

 

Here is a very basic run down on each colour group and how it helps our bodies:
 

  • Red - Very heart healthy and gives strength support to our joints.

  • Orange - A great source of Vitamin C. This group helps keep our eyes healthy.

  • Yellow - Good for our skin and helps our digestive system.

  • Green - Helps our entire body and strengthens our immune systems.

  • Purple/blue - Helps us with our memory and to keep some cancers away.

Ingredients and Directions

 

  1. This one is using rye bread.

  2. You can use tuna, salmon or chicken as your protein base, then add rocket or spinach, top with slice of tomato and alpha alpha, then mustard.

  3. Around the plate, mixed lettuces, cucumber, cherry tomatoes and baby carrots.
